I’ve made granola dozens of times, always trying new things… but I keep coming back to the basics. Notes to self on recipe #13:

Preheat oven to 300F.

Whisk together:

  • 1/4 cup oil (usually olive oil)
  • scant 1/4 cup honey
  • 1/4 tsp real cinnamon
  • 1/4 tsp ground cardamom
  • pinch of salt

Stir in:

  • 2 1/2 cups oats
  • 1/2 cup pepitas / pumpkin seeds
  • 1/2 cup sunflower seeds

Spread the mix on parchment paper on a baking sheet.

Bake ~20-35 minutes, checking/stirring after 10-15min. Most recently, a batch was nicely done at 30 minutes.

Let cool on the sheet (helps it form some clumps, though this recipe isn’t especially clumpy).

Stir in 1/2 cup currants (or raisins) and store.
